BIOACTIVE COMPOUNDS OF GRAPE
Phenolic compounds of grapes belong from different
classes , including :
•phenolic acids (hydroxybenzoic acids and
hydroxycinnamic acids )
•flavonoids (catechin ,flavanols or flavan -3-ols,
proanthocyanidins , flavones , and flavonols )
•stilbenes
which have been reported as responsible for multiple
biological effects .

CONCLUSION
Our results show that using THE HIGH FREQUENCY
ELECTROMAGNETIC FIELD in the first step of wine technology,
has as results a better quality wine from the point of view of
polyphenolic content!
